Applesauce “Cupcakes”

This is the recipe for the “applesauce cupcakes” that Benji love/hated earlier this week.

Apple Crisp Muffins

1 1/4 C. flour
3/4 C. quick-cooking oats
1/2 C. brown sugar
1 tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt

1 C. milk
3/4 C. applesauce
1 egg
2 tablespoons vegetable oil
1 teaspoon vanilla
1.50 C. peeled, finely diced apples (2 medium-sized apples; peeling optional)
